When it comes to cookies, simple is better.  Rolled sugar cookies can often be a hassle to make, and I avoided making them for that reason.  However, this recipe has completely changed my mind about rolled sugar cookies.  It’s simple, easy, and absolutely delicious.

Easy Cut-Out Sugar Cookies

You’ll mix up your dough and let it chill for at least two hours.  After it chills, you’ll move it to a lightly floured surface and roll it out.  You’ll cut your shapes, add to cookie sheets, and bake for a few minutes.  You’re left with delicious sugar cookies that are perfect for decorating.

The size and amount of cookies will depend on your cookie cutter.  I got about 3 dozen cookies.  These are so delicious and perfect for holiday decorating.  Give them a try for the best Christmas treat!

Ingredients
  1. 1 cup butter, softened
  2. 1 cup granulated sugar
  3. 1 egg, beaten
  4. 1 tbsp milk
  5. 1/2 tsp almond extract
  6. 3 cups all-purpose flour
  7. 3/4 tsp baking powder
  8. 1/4 tsp salt
Instructions
  1. In a large mixing bowl, beat butter and granulated sugar until light and fluffy. Add egg, milk, and almond extract and beat until combined.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients and mix until combined. Divide dough into two and wrap in wax paper to chill in refrigerate for 2 hours.
  3. After chilling, preheat oven to 375 degrees F and prepare cookie sheets with parchment paper or silicone liners. Set aside.
  4. Place one section of dough on lightly floured surface and roll to 1/4 inch thick. Cut into shapes, add cookie sheet, and bake for 7-8 minutes (mine were finished in 7). Let cool and repeat with second section of dough.
  5. When cookies are completely cool, frost with icing recipe listed below.

Ingredients
  1. 2 cups confectioner's sugar
  2. 1-2 tbsp milk
  3. 1-2 tbsp light corn syrup
  4. 1/2 tsp almond extract
Instructions
  1. Add confectioner's sugar, 1 tbsp milk, 1 tbsp corn syrup, and almond extract to medium bowl. Stir until paste forms. Add more milk or corn syrup if needed. Add food coloring if desired.
  2. Frost cookies with icing and wait until icing has completely hardened before serving.
